We ferment with native yeast and we don't filter. The wine is grapes and a little sulphur dioxide. Nothing else.
Jožka's wine, naturally.
We are a winemaking family from Uherské Hradiště, south-east Moravia, Czech Republic. Jožka makes the wine and likes to surprise you with each new one. His wife Jaruška cooks, and people remember it. Jaromír, the son-in-law, turns both into one unhurried evening.

Derflanská mladá vína: young wine in the cellars of Sady

For us, November is when young wine is at its most interesting: you taste it from the barrel and the demijohn, unfiltered and sometimes still cloudy. It's full of the aromas that come from the grapes and from fermentation; some are still fermenting, and the finished ones can have a few fine bubbles. If you love fruit and flowers in your glass, you'll find them here at their purest, before the wine settles.

As the young-wine day winds down, a band with guitar and banjo plays at our place and we sing along, and the more of you join in, the better. We'll open a few of our older vintages too.
